Walking Dead Season 3 Finale

We had our friends over for The Walking Dead season finale at our house. Brian was all nervous because Chef Jason was coming. LOL. My baby is so funny.

It was the perfect day to play Ladder Golf. We got a couple of rounds in. Becca actually won against Jay and me. Way to go, Becca!

Dinner turned out great. Chef Jason gave the lion stew his seal of approval. Just kidding. We used beef. We don’t want any protestors knocking on our door.

My favorite part of the dinner was the banana pudding that Brian made the day before. Thanks to Jay for requesting it. We hadn’t made it in a while and I’d almost forgotten how much I love it.

Here are the ingredients in case you want to make it also.

3-4 bananas (we used 5 this time)
1 large box of instant vanilla pudding
1 package of cream cheese
1 container of whipped cream
2-3 packages of Pepperidge Farm Chessmen cookies
2 cups of milk

Pour milk into a large bowl. Add pudding. Mix until they’re completely blended. Add the softened package of cream cheese and the whipped cream. Mix until smooth.

Layer the pan with the Chessmen cookies, then add half of the pudding mixture. Add a layer of sliced bananas. Use the remaining half of the pudding mixture on top of the banana layer. Cover the top with another layer of Chessmen cookies. That’s it.

P.S. For best results, make it the night before so that the cookies have time to absorb the moisture and soften a little.

We’ve made several variations of this dessert since the first time we made it. We’ve made it into a pie and we’ve also made it with chocolate pudding. For this last Sunday, we decided to go back to basics. Although, I think next time we’re going to try making it with Nutella. We will invite Chef Jason for that for sure!

An Pho at Kansas Star Casino

Brian and I went to the Kansas Star Casino last week to claim his free gift. We got there later in the day and they had run out of all the good stuff. All they had left were these knives, Coleman multitools, and some scarves. Brian and I agreed that we would get the most use out of the knives.

While there Brian and got to try An Pho, the Vietnamese restaurant inside the casino. They have very limited seating. I guess because most people tend to eat very quickly and resume gambling. Of course, I had pho.

Brian ordered their chicken banh mi, which he said was just so-so. Neither of us were impressed with the quality of the food.

I think I’ve gotten spoiled because I’ve had some really good pho in this lifetime. We’ve had really good banh mi also. Brian said this was the first time he’d had chicken banh mi. Usually the sandwich consists of sliced pork.

The one nice thing about An Pho is that it’s conveniently located inside the casino so you don’t have to go outside to get some grub. It’s not that great though. I’d say if you really want some Vietnamese food, try one of the awesome Vietnamese restaurants in town like My Tho on Central and Emporia.

Lunch at Cafe Bel Ami

Had a great lunch on Friday with my coworkers Darcy, Sunni, Tiffe, and Carmen. I wanted to do something nice for the group because were celebrating Tiffe’s birthday and Carmen’s new baby. I cleared it with Brian first though, since he would see it on the credit card statement when the bill came. LOL.

The rest of the ladies ordered salad with their meals. I opted for the soup. Everyone loves the salad at Bel Ami, but their vermicelli chicken soup thing is pretty good too.

I was feeling adventurous that day so I ordered the same thing as Darcy. We both got the seafood curry with rice instead of pasta.

Cafe Bel Ami on Urbanspoon

It had been a long time since I’d dined at Cafe Bel Ami. Lunch reminded me of how much I love their food. I’ve yet to eat anything there that I didn’t enjoy.

The only downside to Bel Ami is the slow service. It’s generally a leisurely place to eat so go only if you have some time to spare. It’s definitely not fast food. The dishes are well worth the wait, though. They are absolutely delicious. I cannot wait to return.

On the Border, Another Employee Dinner

We had another employee dinner on Thursday. This time it was at On the Border on the East side.

This time I knew about this a day ahead of time. This allowed my wife and I to come up with a plan for our transportation that day. I got a ride over there with our IT Director and got the opportunity to talk about the presentation I did that day. We picked up our German visitors and then I got to talk to them about my presentation. Everyone was impressed which made me feel really good.

I got a ride home from another coworker who lives in the same general direction as me so it worked out well and gave my wife the opportunity to drive to her class, get home, and not have to worry about coming to pick me up or wait around for me.

I have been to On the Border many times but it had been a while.

I’m not very adventurous when it comes to food and usually get the same thing when I go — a beef burrito covered in cheese. It’s simple and quick.

This time since I was not driving, I decided to have a few beers with meals. The nice thing about my job is they are not opposed to you having a few drinks at work functions. They just ask that you not go nuts and embarrass yourself or the company.

If you have not been to On the Border then you should go at least once. It’s a pretty simple and straight forward Mexican restaurant and they have great margaritas.
